CHINESE CABBAGE
45-60 days Bok choy, pak choi or pok choi is a type of Chinese cabbage. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens. Chinensis varieties are popular in southern China, East Asia, and Southeast Asia.
Start seeds in Late May to late June. Place seeds 1/4″ deep in soil. Keep moist. transplant when 4-6″ tall. Harvest after heads are well formed. Use fresh or store in a cool, high humidity place with good air circulation by wrapping
heads in newspaper. Trim top ends
