Biennial Herb Also known as “Vegetable Oyster”. A non-sweet parsnip-like root that is long and
tapered like a carrot. The upright plants look like
grass and have purple flowers the second summer. The creamy white tapered roots have white
flesh and have a subtle oyster-like flavor. Tasty
when peeled and used in soups, stews or cooked
